I've been a zoo since very young and I'm Male, my now-passed lover was a Male German Shepherd: a 120 pound one at that.. So from a man's perspective..
Make sure you have something soft you can lay on, preferably a 'poofy' cushion or blanket. Something comfortable. You're going to be stuck together for at least fifteen minutes or more.
You need to lay forward on your forearms and try to bring your knees as close to your elbows as possible: the idea is you give him something to grap, pull on, and once he's inside hold on to tightly enough to not slip out. We're obviously not shaped like bitches so our hips don't line up as well. The positioning is roughly the same for a Female human. Make sure you're ready for his size too: my shepherd was a pretty damn big boy so I'm glad (to an extend..) I was too young and dumb to figure out the 'tying position' back then. Remember you're going to be stuck for some time if you take him anal and if you're female a big enough knot could have you stuck vaginally for some time as well.
Something else I want to point out too: dogs don't always 'insta-mature' at 2 years of age. Some take longer, some shorter.. Some of his 'inability' may be him still 'figuring things out' if you know what I mean. Entertain him if he shows the signs and signals: but if nothing happens immediately give him and yourself some time to figure it out, it will come to you if you're patient. A quick aside, some larger breeds don't reach full sexual maturity until around 3 - 3.5 years of age, again just relax and take it easy: try with him when / if he shows interest.
By the sounds of it, it's mainly your position: if a stud can't 'find the mark' and drive it all home in the first few seconds, some lose interest and may not try again right away. Try some different positions, if that doesn't work give him some more time to figure himself out.. Also remember some canines aren't as interested in humans as others are. I watch over a Beagle male who's a prime example.. Not even a hump or an attempt to mount.
Make sure you're nice and clean too, their penile tissue is very sensitive (physically and neurologically: lots of nerve endings...) so don't tug too much, and watch things like piercings and teeth with oral... Also no 'fancy lubes': a good water-based one like straight KY or even J-Lubs is good enough. With as much fluid as a canine produces, especially at the start not a lot of lube should be needed.
Oh how to stop 'accidents', keep it to a specific place like a bedroom, use a certain color blanket, only allow him when you're naked etc.. I'm not saying to train him sexually, what I'm saying is pick a time and place where he'll get the hint that 'it's OK to be naughty' sort of thing. Gsheps have very high intelligence so he'll pick up very quick.

I really think it's more a position problem than anything. All dog + human combos have to find something that fits, and that takes a little time.
That being said, when you're not trying to 'get a good angle' or 'the perfect shot' (working around a camera...) it's a lot easier.
